As I've mentioned SO many times before, I really love brunch. And we've been doing brunch a lot lately. Brunch with friends. Brunch with family. Making brunch at home. Going out for brunch. I love it all!
Today we had brunch with some friends at their house. They made a wonderful egg dish that had peppers and veggie sausage and cheese, and we brought all the fixins for granola yogurt parfaits- homemade granola, fresh fruit, organic vanilla yogurt- and homemade banana muffins. We had a great time, and the food was wonderful! A perfect way to end the weekend!
One Bowl Banana Muffins
1 1/2 cups flour
3 ripe bananas
1/4 cup olive oil or vegetable oil
2 large eggs
1 teaspoon ground cinnamon
1 teaspoon baking powder
2 tablespoons wheat germ (optional)
3/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350 degrees. Place liners in muffin tin, or spray well with non-stick cooking spray.
In a medium sized bowl, mash the bananas. Add oil, eggs, cinnamon, baking powder, wheat germ (if using), sugar, baking soda, and salt. Whisk all together well. Add flour, and whisk until mixture is combined.
Divide batter among muffin cups, bake until golden brown and wooden skewer comes out clean, about 20-25 minutes.
Cool in pan on rack for 5 minutes, then transfer muffins to rack and cool to room temperature.
