mother's day brunch


We celebrated Mother's Day early yesterday with a brunch at our house.

After we enjoyed brunch, we spent the day with my mom, step-dad, and brother, preparing our house for our first child. They helped us move furniture, begin to prepare the nursery, hang curtains, replace outlets- all kinds of things! It also happened to be my grandmother's birthday (who passed away many years ago), so it felt as if everything was coming full circle. We even used my step-dad's mother's glasses to serve the panna cotta!

It was a really nice day spent with family, and a great way to spend Mother's Day weekend!




Brunch Menu

baked eggs w/ spinach and orange bell peppers
Jerel's hashed brown potatoes
tomato and avocado salad w/ feta
orange scented panna cotta w/ strawberries in rhubarb syrup
mimosas


Orange Scented Panna Cotta

1 1/2 teaspoons unflavored gelatin
2 tablespoons cold water
3 cups heavy whipping cream
1/2 cup sugar, or more to taste
pinch of salt
1 teaspoon vanilla extract
2 tablespoons orange juice
1 cup sour cream

Sprinkle gelatin over cold water, let stand for 5 minutes.

In a 3 quart saucepan, warm the cream, sugar, salt, vanilla, and orange juice over medium-high heat. Do not let boil. Stir in the gelatin until thouroughly dissolved. Take the cream off the heat and cool for about 5 minutes.

Pour the sour cream in a medium bowl. Gently whisk in the warm cream a little at a time until smooth. Taste for sweetness. It may need another tablespoon of sugar. Rinse 8 2/3 cup ramekins (we used 6 wine glasses instead) with cold water. Divide cream mixture among each ramekin or glass. Chill for at least 4 hours or overnight.

To serve, either unmold by dipping the bottom of the ramekins into hot water and then turning each one out onto a dessert plate, or serve in their containers. Serve alone of with fruit (we topped with strawberries that we soaked in a simple rhubarb syrup), or drizzle each with good quality balsamic vinegar. Enjoy!

  1. Sounds like great company and a really lovely meal. The orange-scented panna cotta looks awesome. Congrats on the baby. That is wonderful news. Sounds like the baby is ready to arrive soon. Best of luck to you!
