tomatoes, potatoes, and beans


Tonight we had an amazing dinner. And ridiculously simple. The best part- everything on our plates was either from our garden (the tomatoes!) or our local farmers!

We sliced our yellow and red tomatoes, added some fresh minced garlic, olive oil, and salt.


Then we boiled some fingerling potatoes, drained them, and once they were cool we cut them lengthwise. We made an easy dip out of sour cream, grated parmesan, chopped parsley, salt, and plenty of fresh cracked pepper.


For the beans we cleaned and trimmed yellow and green beans, boiled them for about 30 seconds, drained and rinsed them in cold water, and then tossed them with olive oil, white vinegar, dijon mustard, and kosher salt.


These three delicious vegetables made an awesome garden fresh dinner! So simple, and SO good!
