farmers' market recipes
Yesterday we had a great time doing a cooking demo at the Countryside Farmers' Market at Howe Meadow in Peninsula. We made 3 tasty dishes for sampling, all from the fruits and vegetables available at the market.
1) tomato and peach salad with cilantro
Combine tomato wedges and sliced peaches, along with some fresh chopped cilantro and a dash of red pepper flakes. Dress with olive oil, lemon juice, and a bit of honey.

2) blue potatoes and sauteed swiss chard
Heat olive oil in fry pan over medium heat. Add diced blue (or any color) potatoes, season with salt and pepper, and fry until nearly cooked and lightly browned on the outside. Chop stems of swiss chard and mince 2 cloves of garlic, add to pan, and add more oil if necessary. Cook a few more minutes, then add chopped swiss chard, along with a few dashes of red pepper flakes. Season with plenty of salt and pepper. Allow the chard to wilt, and stir to combine the potatoes and chard. Serve hot.
3) broccoli crunch salad with apples and almonds
Bring water to a boil with salt, and add 1 head broccoli florets. Boil about 1 minute, then drain and rinse in cold water. Place broccoli in large bowl. Add 2 chopped apples, about 1 cup chopped toasted almonds or walnuts, and 1/4 cup thinly sliced red onion.
Combine 1/4 cup olive oil, 4 tablespoons apple cider vinegar, 3 tablespoons honey, 1 teaspoon dijon mustard, and salt in small bowl. Whisk until combined. Pour over broccoli and combine all ingredients. Enjoy!

Thanks so much for the great demo today! I finally got a chance to taste the broccoli salad at the end of the market- it was fantastic!!
