mexican chocolate sundae

Like so many of us, I love chocolate. This sundae has a double dose, and a spicy, unexpected kick!

Chocolate ice cream, topped with a Mexican chocolate sauce and toasted coconut! It's very simple, and the results are delicious.















You'll need:

quality chocolate ice cream
toasted coconut (just buy a bag of sweetened shredded coconut and toast some under the broiler for a few minutes until light brown)
Mexican chocolate sauce (recipe below)



Assemble the sundae and eat immediately! The spicy chocolate sauce really adds something special to this sundae. You may even go back for seconds...

MEXICAN CHOCOLATE SAUCE

3/4 cup heavy cream
1/2 teaspoon ground cinnamon
1/2 teaspoon pure ancho chile powder (or cayenne works well also)
1 cup semisweet chocolate chips
1/2 teaspoon pure vanilla extract
