
Until then I bought some fresh beans at the grocery store, along with organic grape tomatoes.
This is a delicious salad that is light and healthy! And it's simple. If you don't feel like cleaning and cutting the beans, you could buy a bag of pre-washed green beans (but what fun would that be!?).

1 pound of fresh green beans, washed and trimmed
1 quart of grape tomatoes, halved
olive oil
balsamic or cider vinegar (really, any kind will probably work)
kosher salt
pepper
dash of garlic powder
I like the beans tender-crisp, so I steamed them for just a couple minutes. Once they were cooled, place the beans and tomatoes in a bowl along with a drizzle of olive oil and a splash of vinegar. Add salt, pepper, and garlic powder to taste.
Eat immediately, or, allow to sit for a little while so that the flavors incorporate.
