We love Mexican food, and breakfast is no exception.
This morning we made some delicious breakfast burritos, full of scrambled eggs, salsas, and cheese. We had some left over mango salad from the night before, so we ate that along with our burritos. A great way to start a Sunday!
Breakfast Burritos
You will need:
5 eggs
4 flour or wheat tortillas
shredded cheese
tomato salsa
corn salsa (optional)
hot sauce (optional)
Scramble the eggs with a little salt and pepper.
Spread the tortillas out like an assembly line. In each tortilla, sprinkle a little bit of cheese, some tomato salsa, and some corn salsa (if using).
Once the scrambled eggs are done cooking, divide the eggs up between the tortillas. Add a dash of hot sauce to each tortilla, and roll up like a burrito. That's it! Enjoy!
Mango Salad
You will need:
2 ripe mangoes
1 fresh jalapeno
1 tablespoon chopped cilantro
1 tablespoon honey
1 tablespoon cider vinegar
Dice the mangoes into 1 inch pieces.
Remove the seeds and mince the jalapeno.
Add mango, minced jalapeno, cilantro, honey, and vinegar to bowl. Mix well.
