Right now we're all about simple, light, and economical meals. This dinner fit all three categories!
We got home from work and I really didn't have a plan for dinner. So we looked in the fridge hoping for some ideas....eggs...lettuce...cheese...apples...got it!
All we did was scramble 4 eggs and made a light salad on the side. We topped baby field greens with sliced apples, crumbled goat cheese, sea salt, fresh ground pepper, olive oil, and an orange vinegar. It was so good and flavorful!
Don't under estimate what you can do with just a few simple ingredients. Enjoy!
