vegetable kabobs (or not...)


The other night we felt like grilling, but wanted something on the healthy. We decided on veggie kabobs.

I cut up a variety of fresh vegetables. Peppers, mushrooms, zucchini, and grape tomatoes. I marinated them in a shallow pan with olive oil, a little balsamic vinegar, plenty of fresh chopped sage and thyme from our garden, and a generous sprinkle of salt and pepper.


I was just about to begin skewering the veggies, when it started to downpour! Not just a little rain, it was pouring.

So...out with the grill, and in with the broiler. And instead of going through the process of putting everything on skewers, I decided to make it easy on myself and just throw the sheet pan under the broiler. About 15 minutes later we were eating delicious veggies with parsley rice. So good!


While the weather didn't exactly cooperate, this was a quick ans easy way to enjoy fresh garden vegetables!
