edamame with jalapenos
We both love edamame, and I was trying to come up with some alternatives to just eating salted beans. So I added some of my favorite flavors...spicy jalapenos and cool cilantro.
Another light and healthy snack!
You will need:
1 10oz bag of frozen edamame, shelled
2 jalapenos, seeds removed, minced
1/2 cup chopped cilantro
juice of 1/2 a lime
2 tablespoons olive oil
dash of cayenne pepper
kosher salt
Cook edamame according to package directions. Drain and rinse in cool water.
In a large bowl, combine edamame, minced jalapenos, cilantro, lime juice, oil, cayenne, and a sprinkle of salt. Combine well.
Enjoy!
