breakfast nachos

This meal combines 2 of my favorite things- brunch and mexican food. It's similar to a quick version of huevos rancheros (which I also LOVE), and it combines many of my favorite flavors. It's easy, and delicious, and a fun way to start the morning!


For 2 servings, you'll need:

tortilla chips
olive oil
orange juice
1 can (15 oz.) black beans, rinsed and drained
4-5 eggs (depending on your hunger)
shredded cheese
bottled salsa (or fresh if you have the ingredients and time)
sour cream
hot sauce (optional)

In a small saucepan over medium low heat, heat one tablespoon olive oil. Once the oil is hot, add the drained beans. Add about a 1/4 cup orange juice, a couple pinches of salt, and a pinch of cayenne pepper, if desired. Stir. Let the mixture come close to a boil, and then turn it down to a simmer.

In the meantime, scramble the eggs.

In 2 shallow bowls or small plates, spread out some tortilla chips for the bottom layer. Top the chips with a few spoonfuls of black beans, then spilt the scrambled eggs between the two plates. Top the eggs with shredded cheese, then a spoonful of salsa, and a dollop of sour cream. Serve with hot sauce. Enjoy!
