summer orzo

We've had some very warm, breezy evenings here lately. It's what my husband and I call "California dreamin". We made this phrase up after we went to Sonoma, California on vacation. Every day in Sonoma was perfect, and every night was warm and breezy. Plus the wine, and the food...it was like paradise. So when we have weather this nice, it's California dreamin'....

And of course, when it's this beautiful outside we like to sit on the deck and sip wine and eat light. That's where this recipe comes in. It's full of summer vegetables and it's very light and fresh!

There are basically three steps:

1) saute the swiss chard



2) grill a few ears of corn (and then cut the kernels off the cob)




3) cook the orzo according to the directions on the package.

Then add some chopped tomatoes and combine all ingredients together with a little olive oil, salt and pepper, and a healthy sprinkle of crushed red pepper.

Voila! A light dinner that's healthy and tasty.
