easy caprese

Recently we had one of the most relaxing, wonderful days we've had in a long time. We shared an amazing picnic with our good friends Sarah and Brad (more about the food later), and we were lucky enough to be at Morgan Farm!

I guess I would consider myself a city girl, but at the same time I love being outdoors and enjoying nature. Dan and Annette of Morgan Farm are basically living our dream- one place in the city, one place in the country. It can't be any better than that! They have a farm paradise with little goats, chickens, a few horses and cows...very cool.

During our dreamy day at the farm we enjoyed a wonderful meal...Sarah made lemon basil chicken salad with homemade pita bread, and an awesome black bean salad. I made a tortellini salad and a quick version of caprese. For dessert we had raspberry buttermilk cake, and we all shared refreshing beverages. All of these foods were easy to pack up, perfect for picnics!

Good friends, good food, and an amazing location to enjoy it all! What else could we ask for?!


Easy Caprese Salad

You'll need:
1 pint grape or cherry tomatoes
2 cups fresh mozzarella (we used Bel Gioioso Ciliegine- which are bite size pieces)
bunch fresh basil (maybe 10 leaves) chopped
olive oil
kosher salt

Cut mozzarella into bite size pieces (or use Ciliegine or Boccaccini).

In a bowl, mix mozzarella, basil, and tomatoes. Drizzle with olive oil, sprinkle with salt. Chill or serve room temp. Enjoy!
