great granola



I've been trying to make the perfect granola for 6 months now. I've tried several recipes and many variations, and finally-I got it! I made granola that is actually GOOD. It's sweet, and crunchy, and has a great blend of dried fruit.

GRANOLA
3 cups extra thick old fashioned oats
1/2 cup sliced almonds
1/4 cup vegetable oil
1/3 cup light brown sugar, packed
1/3 cup mild honey
pinch of cinnamon
pinch of salt

1 cup dried apricots, diced
1 cup dried figs, diced
1/2 cup dried tart cherries, diced
1/4 cup dried blueberries
(or 2 3/4 cups dried fruit of your choice)

Serve with vanilla yogurt and sliced bananas for a delicious breakfast treat!

Put oven rack in middle position and preheat oven to 325 degrees. Stir all ingredients together except for dried fruit. Spread mixture evenly on a non-stick baking sheet. Place baking sheet in the oven and stir every 5 minutes after the 5-minute mark. Be careful, it burns easily! Bake for 15-20 minutes or until light brown. Transfer granola in baking sheet to cooling rack and cool for 10-15 minutes, until crispy. Combine granola and dried fruit in a large bowl and stir to combine. Store in an air tight container, in the freezer.
